Winemaking

Winemaking is both art and science. Just like an artist, we begin by visualising the wine – a spicy Gewurztraminer, an elegant Chardonnay, or an unctuous Syrah. Our viticultural team deliver superb, ripe fruit, packed with flavour and we begin to craft the wine we saw in our mind’s eye.
 
Because our Hawke’s Bay vineyards provide such a diverse range of soil/climate options, we’ve had tremendous success with a large number of varieties. While it is absolutely true that vineyards make wine, it’s important that we have the vision, knowledge, patience and attention to the tiny details, to gently craft the wine we visualised.
 
So winemaking is a series of decisions. From simple ones like whether or not to ferment the juice or age the wine in barrels, to more esoteric ones, like yeast selection, each decision will take you down a very different path. We therefore stick to guiding principles. Our wines will be totally true to the character of the variety, the nature of the soil and be both bold and elegant.
